Great summer snack: Yummy Yamarita!

Africa is full of culture, ethnic groups, and dishes. Due to this extensive variety it is sometimes difficult to find one common element that binds all the dishes together. However, yam is the one starch (at least we would like to think so) that comes back over and over again throughout the continent. It it used and cooked differently depending on the country and the region. This “yamarita” recipe is tasty enough that we could not help but share it with you. This summer snack can be eaten by itself or with some fried plantains. What would you pair it with?


  • 1 small yam (peeled and cut into stripes)
  • 2 eggs
  • 2 tablespoon plain flour
  • 1 cube maggi
  • 1/4 teaspoon curry
  • 1/4 teaspoon ground pepper
  • Salt to taste
  • One cup of oil
